Be The Hero

This Festive Bikini – A Recipe

We present a home-style interpretation of a drink from a new menu. It's a large-volume prepared mix that's packed with the essence associated with Christmas time, rendering it excellent for a holiday party. Save the extra cordial to use in morning drinks, desserts, or for another batch of the drink.

The Bikini Cocktail

Makes enough for 10 servings

Ingredients for the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Drink (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Put the listed ingredients inside a pan, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, take off the burner and leave to cool entirely. Pour into an sealable bottle, seal and refrigerate it in the fridge, where it will keep for around a month.

To make Batch Mix: Mix all the liquids into a large bottle, allow it to infuse for one hour, then strain best through cheesecloth, so it's fully clarified.

To serve: Measure 85ml of your batch mix into your mixing glass packed with ice, and stir carefully for a minute until cold. Pour to a cold coupe glass or similar, decorate with some cranberries and finish using a quick spritz of mandarin oil over the top.
